Roasted Broccoli Brown Rice Salad with Almonds & Chickpeas

1 cup cooked Brown Rice
1 packet Modern Mum RTC Fresh Cut Broccoli
½ cup toasted Almond Nuts
½ can canned Chickpeas (drained & rinsed)
1 tbsp Sesame Oil
Salt & pepper to taste
Garnish: Fresh Coriander
- Blanch packet of Modern Mum RTC Fresh Cut Broccoli 300gm (Blanch: Plunge vegetables into boiling water for 30 seconds, after which rinse under cold water)
- Toss the Brown Rice, cooked Broccoli, Chickpeas, Sesame Oil & season with Salt and Pepper.
- Spoon into serving bowl and sprinkle with Almond Nuts. Garnish with Coriander and serve salad
warm or cold.
Tips: Simplify preparation by adding your packet of Modern Mum RTC Fresh Cut Broccoli into the same pot as the rice during the last 3 minutes of cooking.
