Broccoli, Cauliflower & Avocado Salad

1 packet Modern Mum RTC Fresh Cut Broccoli & Cauliflower
½ tbsp Olive Oil (for dressing), additional for roasting
1 ripe Avocado, diced
1 tbsp Lemon Juice
Salt & Pepper to taste
2 handfuls of chopped fresh herbs of your choice: eg. Cilantro, Chervil, Chives, Flat Leaf Parsley
Garnish: Pumpkin Seeds
- Preheat Oven to 200°C (400°F)
- Spread out Cut Broccoli & Cauliflower on baking sheet, drizzle generously with Olive Oil, sprinkle with Salt and Pepper. Toss well to coat. Insert into preheated oven to roast for 30 minutes.
- Prepare Dressing: Mix both choice of herbs, Olive Oil, Lemon Juice and a pinch of Salt.
- Combine toasted Broccoli & Cauliflower, diced Avocado & dressing. Sprinkle with pepper and pumpkin seeds before serving.
